Whiskey Cure Smoked Salmon

Cured with a splash of Scotch whisky and then oak smoked the traditional way, this salmon is silky with a mellow warmth from the whisky that sits nicely alongside the smoke. Serve it on oatcakes with crème fraîche and dill, on buttered soda bread with a squeeze of lemon, or with pickled cucumber as a festive starter. It’s a natural choice for Christmas, Hogmanay or Burns Night.
