This oak-smoked salmon is marinated in yuzu, ginger and shiso, so it has a Japanese flavour. Yuzu is a fragrant citrus somewhere between lemon and mandarin. Here it brings a bright, zesty note, with gentle warmth from the ginger and a fresh, herby lift from the shiso leaf. Lay slices over a rice bowl with avocado, cucumber and sesame seeds, pile them onto rice crackers for an easy canapé, or serve with a crisp radish and spring onion salad.
