Hot smoked duck breast

This duck breast is oak smoked the traditional way. Hot smoking cooks it as it smokes, so the meat is rich and tender with a deep, woody flavour. It’s ready to eat from the pack. Slice it thinly for a salad with orange segments and watercress, serve it with a spoonful of plum or cherry sauce as a starter, or add it to a festive grazing board.
