Hot smoked Chalk Stream Trout

This chalk stream trout is oak-smoked the traditional way. Hot smoking cooks the fish as it smokes, so it’s tender and flaky with a gentle, woody smokiness.

It’s ready to eat straight from the pack, making it easy to use in quick lunches, brunches, and starters. Flake it over warm new potatoes with crème fraîche and dill, or fold it through scrambled eggs. You can also toss it with pasta, peas and a squeeze of lemon. For an easy pâté, blend it with cream cheese, lemon juice and plenty of black pepper, then spread it on toast or crackers.
