Whole Roasted Sea Bream with Potatoes, Olives and White Wine Recipe

There’s something wonderfully simple yet impressive about roasting a whole fish, and this Mediterranean-inspired sea bream recipe is no exception. Tender, flaky fish is baked on a bed of crispy-edged potatoes, briny black olives, and fragrant garlic, all brought together with a splash of white wine and a burst of fresh parsley. It’s the kind of dish that looks like it came from a seaside taverna but is easy enough to make at home. Perfect for sharing and packed with vibrant flavours, it’s a true taste of the coast.

Ingredients:

  • 400g new or small potatoes
  • Large handful of small black olives
  • 1 garlic clove, finely chopped
  • Large bunch flat-leaf parsley (leaves roughly chopped, stalks reserved)
  • 2 tbsp olive oil
  • Zest of ½ a lemon
  • 1 whole sea bream (about 450g), gutted, head on
  • Small glass white wine
  • Salt and freshly ground black pepper

 Method:

  1. Prep the Potatoes
    Heat the oven to 220°C (200°C fan) or gas mark 7. Boil the potatoes in a pan of salted water for about 10 minutes until just tender. Drain, slice thickly, and leave to cool slightly.
  2. Build the Flavours
    In a mixing bowl, toss the sliced potatoes with the olives, chopped garlic, half the parsley leaves, half the olive oil, lemon zest, and a good pinch of salt and pepper. Spread this mixture evenly across the base of a medium gratin or roasting dish.
  3. Prepare the Fish
    Season the sea bream generously inside and out. Stuff the parsley stalks into the cavity, then lay the fish on top of the potatoes. Drizzle with the remaining olive oil.
  4. Roast & Finish
    Bake for 15 minutes, until the potatoes begin to crisp around the edges. Pour the white wine into the dish and return to the oven for a further 10 minutes, until the potatoes are golden and the fish is cooked through and flakes easily.
  5. Serve & Enjoy
    Remove from the oven, scatter over the remaining parsley, and take the dish straight to the table. Be sure to spoon over the delicious white wine juices from the bottom of the dish. Perfect with a simple side of wilted spinach.
