Whole Roast Sea Bream with Potatoes & Olives

Simple, fresh and full of Mediterranean flavour, this whole roast sea bream is an easy way to create a really impressive dinner without spending hours in the kitchen.

Roasting the fish over sliced potatoes allows all the juices and flavours to mingle beautifully, while olives, garlic, lemon, parsley and white wine give the dish a light, vibrant finish.

Perfect for a relaxed weekend dinner or summer supper.

Ingredients

  • 400g new or small potatoes
  • 1 large handful small black olives
  • 1 garlic clove, finely chopped
  • 1 large bunch flat-leaf parsley
  • 2 tbsp olive oil
  • Zest of ½ lemon
  • 1 whole sea bream, around 450g, gutted and cleaned
  • 1 small glass dry white wine
  • Sea salt
  • Freshly ground black pepper

Method

1. Prepare the potatoes

Preheat the oven to 220°C / 200°C fan / Gas 7.

Cook the potatoes in a pan of boiling water for around 10 minutes, until they are beginning to soften but are not fully cooked.

Drain and allow them to cool slightly before slicing into thick rounds.

2. Build the base

Roughly chop the parsley leaves, keeping the stalks to one side.

Place the sliced potatoes in a bowl with the olives, chopped garlic, half the parsley leaves, half the olive oil and the lemon zest.

Season with salt and black pepper and toss everything together well.

Transfer the mixture to the base of a medium roasting dish.

3. Add the sea bream

Season the sea bream inside and out with salt and pepper.

Place the reserved parsley stalks inside the cavity of the fish, then sit the whole sea bream directly on top of the potatoes.

Drizzle over the remaining olive oil.

4. Roast

Place the dish in the oven and roast for around 15 minutes, until the potatoes are beginning to turn golden at the edges.

Carefully pour the white wine into the roasting dish, then return everything to the oven for a further 10 minutes, or until the sea bream is cooked through and the potatoes are golden and tender.

5. Finish and serve

Remove the dish from the oven and scatter over the remaining chopped parsley.

Serve the sea bream straight from the roasting dish with plenty of the potatoes, olives and delicious white wine juices spooned over the top.

Serving Suggestion

This dish is delicious on its own, but you could also serve it with a crisp green salad, roasted vegetables or some crusty bread to soak up the juices.
