Creamy Salmon, Broccoli & Pasta Bake
This comforting salmon pasta bake is rich, creamy and packed with flavour. Tender salmon fillets are baked beneath a silky mascarpone sauce, with broccoli, sun-dried tomatoes and fresh basil bringing freshness and balance. Ideal for a relaxed family dinner or an easy make-ahead meal.

Ingredients:
- 250g penne
- 300g broccoli, cut into large florets
- 25g butter
- 25g plain flour
- 600ml milk
- 100g mascarpone
- 8 sun-dried tomatoes in olive oil, drained and thickly sliced
- 2 tablespoons small capers, optional, rinsed to remove excess salt or vinegar
- 8 anchovy fillets, halved, optional
- 10 large fresh basil leaves, roughly torn
- 4 fresh skinless salmon fillets
- 50g mature chedder, finely grated

Prepare the oven and pasta
Preheat the oven to 190C (fan 170C, gas 5). Take an ovenproof dish measuring approximately 20 x 30cm and around 5cm deep.
Bring a large pan of salted water to a rolling boil. Add the penne, stir, and cook for 6 minutes. Add the broccoli, return to the boil, and cook for a further 4 minutes until the broccoli is just tender. Drain well. -
Make the sauce
While the pasta cooks, add the butter, flour and milk to a large saucepan. Heat gently, whisking or stirring continuously, until the sauce thickens and becomes smooth.
Remove from the heat and stir in the mascarpone, sun-dried tomatoes, capers if using, anchovies if using, and basil. Add the cooked pasta and broccoli, mixing well. Season generously. -
Assemble the bake
Halve the salmon fillets widthways along their natural divide. Arrange the pieces in a single layer across the base of the ovenproof dish. Spoon the pasta and broccoli mixture evenly over the salmon, then scatter over the grated cheddar.
The dish can be covered and chilled for up to 4 hours at this stage if preparing ahead. -
Bake
Bake for 30 minutes, until the sauce is gently bubbling around the edges and the top is pale golden. Avoid over-browning, as this may overcook the salmon.
