Salmon and Broccoli Pasta Bake Recipe

Ingredients:
- 300g pasta (penne or fusilli work well)
- 2 salmon fillets, skin removed
- 1 large head of broccoli, cut into florets
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 200ml double cream
- 200g grated cheddar cheese
- 50g grated Parmesan cheese
- 1 tbsp olive oil
- Zest of 1 lemon
- Juice of 1/2 lemon
- Salt and pepper to taste
- 1 tsp dried basil or oregano (optional)
- 1/2 tsp chili flakes (optional)

Preheat the Oven:
Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6. -
Cook the Pasta:
Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. About 4 minutes before the pasta is done, add the broccoli florets to the pot to cook them together. Drain the pasta and broccoli, then set aside. -
Cook the Salmon:
While the pasta is cooking, heat the olive oil in a pan over medium heat. Season the salmon fillets with salt and pepper, and cook them for about 3-4 minutes on each side, until just cooked through. Remove from the pan and use a fork to flake the salmon into bite-sized pieces. Set aside. -
Make the Sauce:
In the same pan used for the salmon, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute. Pour in the double cream and bring to a simmer. Stir in the lemon zest, lemon juice, and dried herbs (if using). Allow the sauce to simmer for a few minutes until it thickens slightly. Season with salt, pepper, and chili flakes (if using). -
Combine Everything:
In a large mixing bowl, combine the cooked pasta, broccoli, flaked salmon, and the creamy sauce. Gently mix everything together until the pasta is well coated with the sauce. -
Assemble the Bake:
Transfer the pasta mixture to a large ovenproof dish. Sprinkle the grated cheddar cheese evenly over the top, followed by the Parmesan cheese. -
Bake:
Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is golden and bubbly. -
Serve:
Remove from the oven and let it cool for a few minutes before serving. This dish pairs wonderfully with a simple green salad or garlic bread.
