Salmon and Broccoli Pasta Bake Recipe

Ingredients:

  • 300g pasta (penne or fusilli work well)
  • 2 salmon fillets, skin removed
  • 1 large head of broccoli, cut into florets
  • 1 onion, finely chopped
  • 2 garlic cloves, minced
  • 200ml double cream
  • 200g grated cheddar cheese
  • 50g grated Parmesan cheese
  • 1 tbsp olive oil
  • Zest of 1 lemon
  • Juice of 1/2 lemon
  • Salt and pepper to taste
  • 1 tsp dried basil or oregano (optional)
  • 1/2 tsp chili flakes (optional)

Instructions:

  1. Preheat the Oven:
    Preheat your oven to 200°C (180°C fan)/400°F/gas mark 6.

  2. Cook the Pasta:
    Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. About 4 minutes before the pasta is done, add the broccoli florets to the pot to cook them together. Drain the pasta and broccoli, then set aside.

  3. Cook the Salmon:
    While the pasta is cooking, heat the olive oil in a pan over medium heat. Season the salmon fillets with salt and pepper, and cook them for about 3-4 minutes on each side, until just cooked through. Remove from the pan and use a fork to flake the salmon into bite-sized pieces. Set aside.

  4. Make the Sauce:
    In the same pan used for the salmon, add the chopped onion and cook until softened, about 5 minutes. Add the minced garlic and cook for another minute. Pour in the double cream and bring to a simmer. Stir in the lemon zest, lemon juice, and dried herbs (if using). Allow the sauce to simmer for a few minutes until it thickens slightly. Season with salt, pepper, and chili flakes (if using).

  5. Combine Everything:
    In a large mixing bowl, combine the cooked pasta, broccoli, flaked salmon, and the creamy sauce. Gently mix everything together until the pasta is well coated with the sauce.

  6. Assemble the Bake:
    Transfer the pasta mixture to a large ovenproof dish. Sprinkle the grated cheddar cheese evenly over the top, followed by the Parmesan cheese.

  7. Bake:
    Place the dish in the preheated oven and bake for 20-25 minutes, or until the cheese is golden and bubbly.

  8. Serve:
    Remove from the oven and let it cool for a few minutes before serving. This dish pairs wonderfully with a simple green salad or garlic bread.
