Pan-seared Chilean Sea Bass Recipe

Ingredients:

  • 500g Chilean sea bass, 2 fillets, skin-on preferred
  • 1.5 tbsp (about 22ml) butter or ghee
  • 1.5 tbsp (about 22ml) olive oil or avocado oil
  • ½ tsp salt, or to taste
  • ¼ tsp black pepper, or to taste

Lemon Sauce:

  • 55g unsalted butter (about ¼ cup)
  • 2 tbsp (about 30ml) fresh lemon juice (from ½ large lemon)
  • ½ tsp salt
  • ¼ tsp black pepper

Method:

  1. Prepare the Fish
    Pat the sea bass fillets dry with kitchen paper. Season both sides generously with salt and black pepper.
  2. Pan-Sear the Sea Bass
    Heat the butter and oil in a large frying pan over medium-high heat. Once hot, add the fillets skin-side down. Sear for 3-4 minutes per side, depending on thickness.
    If the fish sticks when you try to flip it, give it another 10-15 seconds—it will release naturally when ready. The fish is done when it flakes easily with a fork and reaches an internal temperature of 60-63ºC.
  3. Make the Lemon Butter Sauce
    In a small saucepan, melt the butter over medium-low heat until it starts to turn golden and fragrant. Stir in the lemon juice, salt, and pepper. Mix well to combine.
  4. Serve & Enjoy
    Plate the sea bass and generously spoon over the lemon butter sauce. Serve immediately and enjoy the rich, melt-in-the-mouth texture.

For extra crispy skin, make sure your sea bass fillets are as dry as possible before seasoning. Press them gently into the hot pan and avoid moving them too soon—this helps the skin crisp up beautifully and release naturally when perfectly seared.
