
Herb-Crusted Baked Haddock

Crispy on the outside, tender on the inside – this herb-crusted baked haddock is a brilliant way to showcase a beautiful white fish. It’s quick enough for a weeknight meal but tasty enough to serve to guests.
Ingredients
- 180ml (¾ cup) milk
- 2 teaspoons salt
- 75g (¾ cup) dried breadcrumbs
- 25g (¼ cup) grated Parmesan cheese
- ¼ teaspoon dried thyme
- 4 fresh haddock fillets
- 60g (¼ cup) butter, melted
Method
1. Preheat your oven
Set your oven to 260°C (500°F) and allow it to fully preheat.
2. Prepare your coating
In a small bowl, stir together the milk and salt. In a separate bowl, combine the breadcrumbs, grated Parmesan, and thyme.
3. Coat the fillets
Dip each haddock fillet into the milk mixture, ensuring it’s well coated. Then press the fillet into the breadcrumb mixture, coating both sides evenly.
4. Bake to perfection
Place the crumb-coated haddock fillets into a baking dish and drizzle with melted butter. Bake on the top shelf of your oven for around 15 minutes, or until the fish flakes easily with a fork.
Serving Suggestion
Serve with lemon wedges and a side of new potatoes or a crisp garden salad for a fresh and comforting meal.
