Fresh Oysters with Classic Shallot Mignonette

Oysters are at their best when kept simple. Fresh, chilled and served straight from the shell, this classic preparation lets their natural flavour shine. Perfect for sharing, special occasions, or when you want to bring a touch of restaurant-quality seafood home.
Ingredients
- Fresh oysters, kept chilled
- Crushed ice, for serving
- 1 small shallot, very finely diced
- 3 tablespoons red wine vinegar
- Freshly ground black pepper
- Lemon Wedges, to serve
Method
Prepare the mignonette
Combine the diced shallot, red wine vinegar and a pinch of black pepper. Set aside to allow the flavours to develop.
Shuck the oysters
Using an oyster knife and a thick cloth to protect your hand, carefully open each oyster at the hinge. Loosen the oyster from the shell, retaining as much of the natural liquor as possible.
Serve
Arrange the oysters on a bed of crushed ice. Spoon a small amount of mignonette over each oyster just before serving, or allow guests to add their own. Finish with a squeeze of lemon if desired.
