Ingredients:
- 1kg potatoes, peeled and cut into chunks
- 400ml milk, plus a splash for mash
- 25g butter, plus extra for mash
- 25g plain flour
- 400g fish pie mix (a mix of salmon, smoked haddock, and white fish works well)
- 150g prawns, cooked and peeled (optional)
- A small bunch of chives, chopped (optional)
- 100g grated cheese (optional)
- Salt and pepper to taste
Instructions:
Prepare the Potatoes:- Boil the potatoes in salted water for about 15-20 minutes until tender. Drain well, then mash with a splash of milk, a knob of butter, and seasoning to taste. Set aside.
Make the Sauce:
- Melt 25g butter in a pan over medium heat, stir in the flour, and cook for 1-2 minutes until it forms a paste (roux).
- Gradually whisk in 400ml milk, stirring constantly to prevent lumps, until you have a smooth sauce. Cook for a few more minutes until thickened. Season with salt and pepper.
Assemble the Fish Mixture:
- Place the fish pie mix into a baking dish. If using, add the cooked prawns and sprinkle with chives.
- Pour the sauce over the fish mixture, making sure everything is well-coated.
Top with Mash:
- Spoon the mashed potatoes over the fish and sauce mixture, spreading it out evenly. Use a fork to create a pattern or rough texture on the top to encourage crispiness during baking.
- Optionally, sprinkle grated cheese over the mashed potatoes for a golden, cheesy crust.
Bake:
- Preheat the oven to 200°C (180°C fan) or Gas Mark 6.
- Bake the pie for about 25-30 minutes, or until the top is golden and the filling is bubbling around the edges.
