Crispy Cod Goujons

Perfectly crispy on the outside and tender on the inside, these homemade cod goujons are a hit with kids and adults alike. Lightly coated in seasoned flour and breadcrumbs, these tasty fish strips offer a healthier, homemade twist on the classic fish finger. Ingredients:
- 400g cod fillets, cut into strips
- 2 eggs, beaten
- 75g plain flour
- 100g panko breadcrumbs (or regular breadcrumbs)
- Salt and pepper, to taste
- Oil for frying (vegetable or sunflower oil works well)
- Lemon wedges (optional, for serving)
Instructions:
Prepare the Coating:
- Place the flour on a plate and season with salt and pepper.
- Put the beaten eggs in a shallow bowl.
- Spread the breadcrumbs on a separate plate.
Coat the Cod:
- Dredge each cod strip in the seasoned flour, then dip into the beaten eggs, allowing any excess to drip off.
- Roll the cod in the breadcrumbs, ensuring it’s evenly coated. Press gently so the breadcrumbs stick well.
Fry the Goujons:
- Heat enough oil in a frying pan to shallow-fry the goujons over medium heat.
- Fry the cod strips for about 3-4 minutes on each side, or until golden brown and crispy. Ensure they are cooked through and piping hot in the centre.
Drain and Serve:
- Remove the goujons from the pan and drain on paper towels to remove excess oil.
- Serve immediately, optionally with lemon wedges, and your favourite dips or sides.
