Crispy Cod Goujons

Perfectly crispy on the outside and tender on the inside, these homemade cod goujons are a hit with kids and adults alike. Lightly coated in seasoned flour and breadcrumbs, these tasty fish strips offer a healthier, homemade twist on the classic fish finger. Whether you’re serving them as a casual dinner, a family-friendly treat, or with a side of dips for a party platter, these cod goujons are sure to become a favourite in your home.

Ingredients:

  • 400g cod fillets, cut into strips
  • 2 eggs, beaten
  • 75g plain flour
  • 100g panko breadcrumbs (or regular breadcrumbs)
  • Salt and pepper, to taste
  • Oil for frying (vegetable or sunflower oil works well)
  • Lemon wedges (optional, for serving)

Instructions:

Prepare the Coating:

  • Place the flour on a plate and season with salt and pepper.
  • Put the beaten eggs in a shallow bowl.
  • Spread the breadcrumbs on a separate plate.

Coat the Cod:

  • Dredge each cod strip in the seasoned flour, then dip into the beaten eggs, allowing any excess to drip off.
  • Roll the cod in the breadcrumbs, ensuring it’s evenly coated. Press gently so the breadcrumbs stick well.

Fry the Goujons:

  • Heat enough oil in a frying pan to shallow-fry the goujons over medium heat.
  • Fry the cod strips for about 3-4 minutes on each side, or until golden brown and crispy. Ensure they are cooked through and piping hot in the centre.

Drain and Serve:

  • Remove the goujons from the pan and drain on paper towels to remove excess oil.
  • Serve immediately, optionally with lemon wedges, and your favourite dips or sides.
