Creamy Prawn & Potato Pie (Serves 6)

Fresh, comforting, and packed with juicy prawns – this pie is perfect for laid-back weekend dinners or a midweek treat with a twist. Using 1kg of our Just Caught prawns, it’s seafood comfort food at its finest.

 

Ingredients:

  • 1kg Just Caught raw prawns, peeled and deveined (defrosted if frozen)
  • 750g Maris Piper potatoes, peeled and cut into chunks
  • 50g butter
  • 3 spring onions, finely sliced
  • 1 garlic clove, crushed
  • 1 tbsp plain flour
  • 300ml milk
  • 150ml double cream
  • 1 tsp Dijon mustard
  • 1 tbsp lemon juice
  • Small bunch of parsley, chopped
  • Salt & freshly ground black pepper
  • Optional: handful of grated cheese for the top

Method

  1. Boil the potatoes in salted water for 15–20 minutes until soft. Drain well, then mash with a knob of butter and a splash of milk until smooth. Season to taste and set aside.
  2. In a large frying pan, melt the butter over medium heat. Add the spring onions and garlic, cooking for 2–3 minutes until soft and fragrant.
  3. Stir in the flour, cooking for another minute. Gradually whisk in the milk and cream, stirring constantly to avoid lumps. Let it bubble gently for 3–4 minutes until it thickens.
  4. Add the Dijon mustard, lemon juice, and season well. Fold in the prawns and cook for 2–3 minutes until just turning pink – don’t overdo it! They’ll finish cooking in the oven. Stir through the chopped parsley.
  5. Spoon the creamy prawn filling into a baking dish. Top with the mashed potatoes and fluff it up with a fork. Sprinkle over a little grated cheese if using.
  6. Bake at 200°C/180°C fan/gas 6 for 20-25 minutes until golden and bubbling.

Serve With:

  • Steamed greens or a crisp garden salad
  • A wedge of lemon on the side for extra zing
