Cajun King Prawn Tacos with Crunchy Slaw & Lime Dressing

Juicy Cajun-spiced king prawns, crisp homemade slaw, creamy avocado and a fresh lime yoghurt dressing all wrapped up in warm tortillas. These tacos are quick to put together, full of flavour and perfect for an easy summer dinner.

Ingredients
For the Cajun prawns
- 720g king prawns, fresh or defrosted
- 4 tbsp sunflower oil
- 8 tsp Cajun seasoning
For the slaw
- 1 white cabbage, finely shredded
- 2 red onions, thinly sliced
For the lime dressing
- 500g Greek yoghurt
- Zest and juice of 2 limes
- 4 tsp honey
- 4 tsp mint sauce
To serve
- 2 avocados, sliced
- 16 small soft tortillas
- Lime wedges, optional
Method
- Make the dressing. Add the Greek yoghurt, lime zest and juice, honey and mint sauce to a bowl. Stir until smooth and well combined.
- Prepare the slaw. Finely shred the cabbage and slice the red onions. Toss together in a large bowl, then mix through half of the lime dressing. Keep the remaining dressing for serving.
- Cook the king prawns. Heat the sunflower oil in a large frying pan over a high heat. Add the prawns, sprinkle over the Cajun seasoning and toss well to coat. Cook for around 4–5 minutes, turning regularly, until the prawns are piping hot and cooked through.
- Warm the tortillas. Heat the tortillas briefly in a dry frying pan until soft and lightly toasted.
- Build your tacos. Spoon a generous helping of crunchy slaw onto each tortilla, followed by the Cajun king prawns and slices of creamy avocado.
- Finish and serve. Drizzle over the reserved lime dressing and serve immediately, with an extra squeeze of fresh lime if you fancy it.
