Ingredients:
For the Sea Bream:
- 2 whole sea bream, cleaned and scaled (from JustCaught.co.uk)
- 2 lemons (1 sliced, 1 juiced)
- 4 cloves of garlic, thinly sliced

- 4 tbsp olive oil

- 500g baby potatoes, halved
- 1 red onion, sliced
- 1 fennel bulb, thinly sliced
- 1 red pepper, sliced
- 2 tbsp olive oil
- Sea salt and freshly ground black pepper (to taste)
Instructions:
- Preheat the Oven:
- Preheat your oven to 200°C (180°C fan) or Gas Mark 6.
- Prepare the Vegetables:
- In a large roasting tray, toss the baby potatoes, red onion, fennel, and red pepper with 2 tbsp of olive oil. Season with sea salt and freshly ground black pepper.
- Spread the vegetables evenly across the tray and place in the oven to roast for 15 minutes.
- Prepare the Sea Bream:
- While the vegetables are roasting, prepare the sea bream.
- Make 3-4 slashes on each side of the fish with a sharp knife. This will help the flavours penetrate the fish.
- Stuff each fish with lemon slices, garlic slices, and a handful of fresh herbs.
- Drizzle the fish with 2 tbsp of olive oil and the juice of 1 lemon. Season generously with sea salt and freshly ground black pepper.
